any ideas where I need to turn something on or off for the Manufacture Category name to state the Manufacture and not just...

This is a mod that you have to install. This function is not default, and needs to be hacked in. You are in luck though, there is a contribution at oscommerce.com that does this. I think it is the header tags contribution. Search through the contributions there, you will find what you are looking for...
