Change Product Attribute #??

Hey all, just wondering where I can change the # of attributes allowable in the admin section. For ex......Color->allows three colors max that I can see, however, some of my items have more!!

Also, can anyone please tell me what the italian words within the product attribute page mean??

Any ideas?
