What file would I modify to change the way the product listings page looks?

example, if i click on a category and it lists all the products in that category.

I am a newbie also but I don't understand what exactly you are trying to do. Do you want to click on the title Category on the Category info box?
I am trying to learn PHP but I do know ColdFusion. It looks like most of the product pages are brought up by passing a parameter cPath in the URL. You would need to find out how cPath is referenced in the index.php file in the catalog directory.
