E-mail problem

Hi my e-shop its up and running but...... i have a problem with the e-mails
(when the costumer make an order one mail send to his mail account
when the mail open you can't read anything couse you see it like japanise
this problem hapents only in greek language)
How can i resolve this problem?
I can't change the oscommerce encoding UTF-8 right?

Please help.
