Default Getting new template for OSCommerce...how many pages?

I'm getting a template to change the look and feel of oscommerce to suit the theme.

What pages are relevant to the change. Or a better question is how many pages?

I myself have found the following:

index.php
account.php
products_new.php
product_info.php
search.php
advance_search.php
account_notification.php
products_review_info.php
shipping.php
privacy.php
conditions.php
contact_us.php
shopping_cart.php
checkout_shipping.php

and a couple of more i may have missed here

Is there documentation which tells me what pages get loaded and how i can move the fields and information on them?

I will continue to read the documentation on this site....so if you have links which refer to my situation, please share them with me.

Oh by the way, i may be going out on a limb here!?! According to what i've said, is this the correct way to modify the look and feel of OSCommerce? Is there an easier way?

To be honest I'm not an MAX user, but since it uses the BTS I guess you can edit "main_page.tpl.php" and "box.tpl.php" (and the stylesheet of course) to change the main looks. You can do an awfull lot editting only these three files, believe me!
If you really need more, you might have to edit the files in "templates/.../content" too, or even some core code.

(since I'm not an MAX user I'm not sure about the filenames/location)
