Okay, so somewhere between the orders table having the new order inserted with a unique ID, then the next table is either order_products or order_total, both of which are using order_id 1 every time...

Does anyone have a flowchart of all the files being included/required and/or a description of what each file does that may help figure out where the order ID is getting lost?
