Just empty the tables that you want empty. Use phpmyadmin, sqlyog or another mysql front end. Less than 5 minutes, and you will have an empty db.

simple enough... I just wanted to be sure I wasn't going about it the wrong way. Thanks for the info!
OK, how far can I take it? If I empty *every* table, will it break anything?
schwim, yes it will. You should only empty non-system tables. Take a look at the content of the tables. You dont want to empty any configuration info. Orders, customers, products, attrubutes, gift vouchers, coupons can all be removed.
Make a backup of the db first. If you screw up, just restore it and try again.
