Additional shopper tracking

Hi,
I've looked for help for this problem/application but haven't found any, so am trying here. I've successfully installed MS2.2 for testing but will be going to MAX version before I go live with shopping site. Here's the desired application:

1. NEW feature will permit shoppers to select a single organization (when first registering) so that (say) 1% of the purchase price of a product (shipping, handling, tax, etc. NOT included here) will be contributed to their organization. The organizations that they can select from will be presented in a list with radio buttons as part of the registration process.

Each time they re-visit the site and buy more, their organization will get credited with the purchase. If they ever want to select a different organization to receive contributions, they would do this through the account editing component.

So, I need to get the organization information into MySQL table so that they are pulled out and displayed with radio buttons when shoppers register. And, they should be able to update their supported organization through account editing.

2. Every order completed needs to be posted to MySQL table so that I can track & display data over time (how much sold on behalf of organization, amount contributed, etc.) and shoppers can view their history of support etc.

So basically I need to add to MySQL table after order completed:

shopper
organization
purchase amount (NOT including shipping, tax, etc.)
date of purchase

I know how to work with mysql tables ok and reasonably knowledgeable about PHP.

Once I can get the data described above into a table, I can do the code outside of OSCOMMERCE to manipulate and display the data described above. Just need OSCOMMERCE to capture and store the above data regarding organization and purchase amount for each individual shopper/each purchase made.

Just looking for some direction on this addition to the OSCOMMERCE program. Any help greatly appreciated. Thanks; and thanks for a magnificent shopping system.
