Default catalog/images/__x__ How to set location?

I have my categories set up, I'm adding products.
But all the product images are being uploaded into
"catalog/images/"
instead of
"catalog/images/denim/"

I do not see a way to set the category's image folder location.
The default OSC installation had all the products set up this way so I kow it's possible. I'm obviously missing something somewhere. Can someone point me in the right direction?
