This is the standard operational aspect of both osC and 'Max - would require custom coding. Simple solution is to include in a Category (which could be all Highlighted Products, for example).

Note: this type of display may be addressed by using Featured Products, in 'Max 2.5 - have a look at marking these products as Featured.

Featured products will be shown but clicking on them or trying to buy will take you nowhere.

Seems like a lot of effort to not simply put them in a folder called "our products" or similar.

What possible purpose would creating organizational chaos have? If there is no category, there is no way to organize the products. Stores need to be organized so that customers can find products. I can see no valid reason to code for disorganization.
Of course, just because I cannot understand your reasoning doesn't mean that it isn't valid, so please enlighten me. Why would this be desirable in any inventory situation? And why wouldn't it be just as valid to create a category called "Uncategorized" or "misc" or "Unusual?" If you make a convincing argument (and it has to convince ME, not you) I would be happy to consider this as a future option.

The store has just a few (6) products, I understand that I can put them into a folder, but then the folder name will be visible on the breadcrumb.
btw, how unorganized can 6 products be in root?
Not a convincing argument. All you want is to change the breadcrumb? Really? Still no valid reasons I can see to change this.
It is better to just edit/disable the breadcrumb trail for your category page. It is simple logic and one line of code.
