I have a two part question...
1- how can I determine which version I am running. I am on V2, but I do not know the RC. I think it is RC2.
2 - What is the upgrade path to the latest version if it is RC2 or RC3?

Are you using oscommerce or oscmax?
Try:
On your server look for the file application_top.php inside the includes folder.
Around line 40 you should see:
// define the project version
define('PROJECT_VERSION', 'osCMax v2.0.25');
This tells us which version you are using, if you can post that information we should be able to help.

Why not create a new 2.0.25 development site, then migrate your data via phpmyadmin or SQLFront (or similar)? Once stable, customised and tested, then transfer to live, replacing your old site.
The alternative will be successive upgrades, time consuming and a high risk of keeping 'stale' configurations and files.
RC2-->RC4-->2.0-->2.0.4-->2.0.25 (or something very much like it)
