Can i upgrade from the latest version to v2.1 when it's released?
How long is a piece of string? Actually, there's a bit of a drive on, to get 2.1 to a general release state. Think a couple of months, as opposed to a couple of weeks, to be on the safe side.
Michael always provides an upgrade path ('cos he's a very nice man) It's one of the reasons why I try to steer folks in the direction of particular contributions - an attempt to make an upgrade easier.
[I guess big donations to 'Max and/or PGM will drive things a lot quicker]

There is no firm schedule at the moment. We do have a planned feature set that we are working toward, but there are still a couple of big items that we want in before we firm up the release schedule.
Yes you will be able to upgrade a 2.0.25 store to 2.1 when it is released.
It will be easier if you stick to best practices: keep most of your changes to your custom template if possible and if adding mods, make sure to clearly comment them. I recommend using SVN to check out 2.0.25 code and use it to manage your changes.
