Help for a dumb blond

Ok here is a question and if it is in the literature and I could not find it call me a dumb blond.

Lets say I set my columns to 3 in the product listing in the admin section.
Now 3 columns works fine for some categories but I have a couple that need to be single like the original format. Is this possible somehow or once I set to 3 I am stuck at 3 for all categories and sub categories??????

Is there any php master that can answer this for me.

This would require custom coding, as it is an either or option at this point.
