If you download osCmax and look at any of the admin pages that have CKeditor in them, then compare to your version, the changes are pretty obvious. Replace the FCK stuff with the CK stuff. Remove any FCK stuff that does not carry over to CK like any of the includes at the top of those files and the entire FCK script itself. I think there is a CKeditor contribution at addons.oscommerce.com that explains it step by step as well.
