template change

hi everyone, i installed a custom made template and have since tried to set it back to the default aabox template via the admin panel but when i do, all the categories and products disappear - how do i back up all the products and categories i have created so that when i re-install the files that were changed during the template install i can then just put back the backed up files and all products and categories are available.

Now - i have managed to set everything back to default but when i sellect dhtml or cool menu options the category list on the left side disappears - whats all that about - see for your self
