help controlling meta data

currently “gift vouchers” is showing up in my meta description and keywords on my fallback template - how to modify that? I realize thats a product I created. But for it to be on the landing page, I was just curious how we can modify certain pages meta tags or add to them?

Take a look at the meta_tags.php file - this is where the meta data is constructed. It currently adds all your category headers as keywords - so a quick string fiddle at the bottom of this file could remove it for you. Perhaps a flag in the system could be added to include/exclude certain categories from the meta information.
