I searched through the Oscommerce contributions and found a few that might work. Which one would you say is the best? I don't want to install one that might cause problems.
I'm using this one:
osCommerce Community Add-Ons
These contribs are usually 'drop in' so it won't hurt to try a few and see what features you would like.
Send to Google and have a look in your Google account after a day or so. Google will tell you exactly how your sitemap is doing.
The above contrib needed some modding when used with the latest Ultimate SEO URL's contrib. (It outputted slightly different url's than the SEO contrib was generating.)
If you are not using SEO url's then it's just 'drop in'.

I actually am using the SEO url's feature that came with OscMax V2.0.0. What would I do differently to install this mod?
OK, I'm not sure how the osCMax SEO url version relates to the latest Ultimate SEO contrib (2.7 I believe)
Just drop in the sitemap php files from the contrib in your root folder and call them with your browser. You should be able to see the output. Check if the generated links point back to your products. I remebember I had some trouble with the priorities but that may have been a SEO issue.
If at first sight the output looks OK then point google (or Yahoo) to your XML sitemaps. In your Google (or Yahoo) dashboard you will see detailed feedback on the sitemap generated output.
