when processing do you mean in the Payment Information screen:
Credits Available
Gift Vouchers/Discount Coupons
Enter Redeem Code
Remove that in the ADMIN - Modules - Order Total - Gift Vouchers.
and the Gift Voucher FAQ link? - Remove that in /catalog/includes/boxes/information.php
