Holding payment processing

I am looking for a way to hold all payments from being processed until I can review the orders at the end of the day. Right now OSCMax processes the order and bills the card right away. I would like to hold the orders and process a batch at the end of the day. I sell thousands of fishing lures in hundreds of colors, so if I am out of stock on something I do not want the system to charge them for it. I would also like to be able to go back to that order and process the payment for the back ordered item's. Is this possible? I would like it to work for both Authorize.net and Paypal.

If you choose 'credit card' as a payment option, you will be able to manually process (via cut & paste) your customer's CC info upon your review of the order.

Thanks but that adds up to a lot of work considering the amount of orders we process. I was hoping to find a more streamlined approach
