Default Product automatically disabled when stock level reaches 0

Quick question,

When the stock level for one of my products gets down to cero, the product is automatically disabled on my catalog (can not longer be seen by customers). I have looked for a seting on the admin section to disable this feature since I want those items to still be available on the catalog, but with no luck.

Am I missing a seting somewhere? Or, if it is supposed to always be this way, any hints on the file to edit? (basically the one that sutracts stock after a purchase, and if it is <=0 will disable the product)

configuration -> stock -> check stock level = false

That didn't seem to do the trick.

I have it set to true right now, and this way when someone tries to checkout with more items than what I have in stock, they won't be allowed to finish checkout (you have in your cart more items than we have in stock on product ***)

If I set it to false, it might leave the product enabled on the catalog when stock reaches cero (which is what I want), but then customers can also checkout with products I do not have in stock. Just tried to add a product which I have 0 stock to my cart, and when checking out I do not get any warnings about stock levels and I am allowed to finish the purchase
