In your "english" and other langauge directories..... search for the text you want to change....

ie: catalog/includes/language/english/modules/shipping/table.php

Two weeks?!? What are you doing, manually going through each file?

Do yourself a favor and get a text editor that searches across files. You would have found the text in under a minute.

A great tool for searching across file and subdirectories is the free tool, Crimson Editor.
