How configure mail to show caracters correctly?

When I send an email from my admin from customers / orders (change state and add a comment), the caracters don´t show well:

Example:

llegará mañana

when the correct form is:

llegará mañana

I have the MIME HTML mails suport in true, and I change my database collation to utf, but the mails don´t show well, ¿anyone can help me?
